Miso Chicken Marinade

Ingredients (1 Portion)

[Marinaded Chicken]
Boneless chicken thigh (Recommended to have skin!) 150-200g
All Purpose Miso Sauce 2 table spoons
Cooking oil 1 table spoon

[Other material]
Zipper bag (or polythene bag, or wrapping film)
Kitchen Towel (to remove extra sauce)

[Glazing Sauce]
All Purpose Miso Sauce 2 table spoons
Water 2 table spoons

[Garnish]
Spring onion
Roasted Sesame seeds

[Rice and Stir-Fried Side Vegetables]
Steamed Rice (We recommend Koshihikari Rice !)
Sugar snaps
Red capsicums
Cauliflower
Salt
Pepper


Procedure

[Marination]
1. Because it's rare to find boneless chicken with skin, so we recommend you to buy chicken thigh with bones, and remove bones by yourself. It's not difficult at all!
2. Prick the skin with a folk many times
3. Rub 2 table spoons of All Purpose Miso on chicken very well


4. Put the marinaded chicken in a zipper bag, remove the air from the bag, and store it in the fridge for 24 hours.


5. We recommend not more than or not too less than 24 hours, because by this marination, the sauce's taste is well absorbed all over in the chicken meat. Marination for more than 24 hours will make the meat too soft and salty.


[Grill the meat]
1. Remove the marinaded chicken from the fridge.
2. Remove the sauce from the chicken surface well. Do not worry about the taste. By this time, miso sauce is well absorbed in the chicken. And miso is easy to be burned! So this process is important. 


3. Pour 1 table spoon of cooking oil over the frying pan.
4. Place the chicken skin-side down, and turn on the heat to low to medium heat.


5. Slowly cook the chicken for 4 to 7 minutes without touching the chicken until chicken turns brown.


6. Flip the chicken and continue to cook for a few minutes.

[Glazing Sauce]
1. Use kitchen towel and quickly remove the oil from the pan
2. pour 2 table spoons of All Purpose Miso Sauce and 2 table spoons of water into the pan, and turn on the heat to low heat.
3. Bring the sauce to simmer and once it's thicken, turn off the heat.


[To Serve]
1. Cut the chicken into several strips.
2. Serve on a plate over steamed rice.
3. Pour the glazing sauce over the chicken.
4. Sprinkle chopped spring onion and roasted sesame seeds.
5. Enjoy with some stir-fried or steamed veggies!
